ANY sauce (including pretty much all of the Blair's line, with their above-average Pure Death being a shining exception) that employs capsaicin extract is, by definition, poop. If you want something not too sour, but also without the liquid-at-the-bottom-of-a-dumpster-in-Chinatown flavor of extract, I suggest CaJohn's Sauce 10 (http://cajohns.com/vmchk/Hot-Sauces/Sauce-10.html) or any of their sublime Select Chile Purees (http://cajohns.com/Hot-Sauces/Select-Pu ... ducts.html). That is, of course, if you aren't a member of the elite who get to relish our own John Biscoe's Hawk Hollow Heat line of smoked chile sauces, available in 4 levels of heat (mild cayenne, hot mixed chinensis, extremely hot mixed trans-habanero, and scorching pure bhut jolokia), every day.
Sounds yummy! That is why i prefer the Lingham's head and shoulders above Blair's. Although the dry Blair's Death Rain nitro tastes amazing for the 550000 SHU reported count. The oldest jalapeno based Blair's might be without extracts and it does taste better than the rest of the ones i've tasted. The availability of chili sauces is limited here although there are two specialty stores i know of. Not everything from them is available close to me so i'd have to do an internet purchase but then the whole world is my supplier so what's the point? Poppamies and fatalii are the Finnish chili specialty stores. I haven't had nearly all of their stuff yet. Blair's chips vary in taste and i like some of them and the one that uses Death Rain or was it the amped up Nitro version is nice although hot for most.
